SPANISH RICE WITH CHORIZOS

Most Spanish rice recipes call for browned ground beef, but the addition of chorizos gives this recipe more flavor.

2 slices diced bacon

2 tablespoons vegetable oil

1 pound fresh chorizo sausages, cut into 1-inch pieces

1 medium onion, chopped

1 sweet green pepper (seeded and cored), chopped

2 cups tomato sauce

1 cup uncooked rice

Salt to taste, if desired

Freshly ground black pepper

Cook the bacon until it is crisp. Remove it with a slotted spoon and drain it on paper towels. Drain off the fat from the skillet.

Heat the vegetable oil in the skillet and sauté the chorizos until they are browned. Remove with a slotted spoon. Drain off all but 2 tablespoons of fat.

Sauté the onions and peppers until they are crisp-tender.

Return the bacon and chorizos to the skillet, add the tomato sauce, and bring to a simmer.

Cook the rice according to package directions.

Add the rice to the skillet, mix well, add salt and pepper, and serve warm.
